Sugar-Free 4th of July Parfait for Diabetics




Sugar-Free Red, White & Blueberry Parfait

Prep time: 10 minutes | Serves: 4 | Carbs: ~12g per serving

Ingredients:

  • 2 cups plain Greek yogurt (unsweetened)
  • 1 tsp vanilla extract
  • 1-2 packets stevia or monk fruit sweetener (to taste)
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 2 tbsp sugar-free whipped topping (optional, for garnish)
  • A few mint leaves for garnish

Instructions:

  1. In a bowl, mix the Greek yogurt with vanilla extract and sweetener until well combined.
  2. In clear glasses or mason jars, layer the ingredients: start with a spoonful of yogurt, then a layer of blueberries, another layer of yogurt, then a layer of strawberries.
  3. Repeat layers until the glass is full, finishing with a few berries on top for that red-white-blue effect.
  4. Add a small dollop of sugar-free whipped topping and a mint leaf on top if desired.
  5. Chill for at least 15 minutes before serving, or serve immediately.

Why it works for diabetics: Greek yogurt provides protein without a sugar spike, and both berries are lower on the glycemic index than most fruits, so this stays satisfying without the blood sugar rollercoaster a traditional 4th of July dessert would cause.
