Easy 3-Ingredient Diabetic Pancakes That Won't Spike Your Blood Sugar

Who says you can't have pancakes when you're managing diabetes? These fluffy little beauties are made with just 3 simple ingredients and taste just like the real thing — without the blood sugar roller coaster. Perfect for a quick weekday breakfast or a lazy weekend morning!

 

Ingredients

       2 ripe bananas, mashed

       2 large eggs

       1/2 tsp cinnamon (optional but delicious!)

 

Instructions

1.    Mash the bananas in a bowl until smooth.

2.    Crack in the eggs and mix everything together until well combined.

3.    Add cinnamon if using and stir.

4.    Heat a non-stick pan over medium heat and lightly spray with cooking spray.

5.    Pour small rounds of batter onto the pan (about 3 inches wide).

6.    Cook 2-3 minutes per side until golden. Serve and enjoy!

 



Why this works for diabetics

Bananas do contain natural sugar, but when combined with eggs (pure protein and fat), the blood sugar impact is much gentler than regular flour-based pancakes.
